Moringa Leaves Sri Lankan style (serves 2)

Ingredients

  • 2 handfuls of Moringa leaves or any greens of your choice, shredded or finely chopped
  • 2-3 Indian shallots ( or red onions)
  • 1 clove garlic
  • 1/4 tsp turmeric powder
  • Salt to taste
  • Handful of desiccated coconut or fresh coconut

Put all the ingredients together with moringa or green leaves of your choice, and desiccated coconut.Cook on a low heat for 5 minutes or until leaves are nicely cooked .

Cooking tips:

You can use curly kale, spring greens or any green leaves instead of moringa leaves. To keep the leaves nice and green keep the lid open while cooking. Always shred them or slice finely. Use a food chopper if needed. Use a mortar and pestle to crush garlic and shallots together. Indian shallots are commonly used in Sri Lankan cooking but red onion will do. Serve with basmati rice and lentil curry. Perfect vegan meal
